Sweet Potato Pomme Duchesse with Black Truffle Mayonnaise
Ingredients
- 750 grams of sweet potato
- 2 egg yolks
- 1 tbsp Jean Bâton Black Truffle Mayonnaise
- Salt pepper

- Peel the potatoes, cut the sweet potatoes into equal pieces and wash them well.
- Heat a pan with water and bring to a boil. Add the sweet potato and cook for 15 to 20 minutes until tender. Meanwhile, heat the oven to 180 degrees.
- Drain and mash the potatoes.
- Mix 1 tbsp mayonnaise and 2 egg yolks into the sweet potato and season the mixture additionally with salt and pepper, if necessary.
- Scoop the fine puree into a piping bag, with large serrated nozzle. Pipe tufts onto a baking sheet lined with baking paper.
- Bake the Pomme Duchesse for about 30 minutes until nice and crispy. Always check in between
