Bagel with avocado egg salad

Ingredients

  • 4 bagels
  • 4 eggs
  • 2 ripe avocados
  • 1 red pepper
  • 20 sprigs of chives (tub of 20 g)
  • 4 tbsp. Organic No Sugar Mayonnaise or Belgian Recipe Mayonnaise
  • 0.5 tsp curry

  1. Bake the bagels according to the package directions.
  2. Boil the eggs hard for 8 min. Scald and peel them. Cut into small cubes and place in a bowl.
  3. Halve the avocados lengthwise and remove the core. Scoop the flesh out of the skin with a spoon. Cut into small cubes and add to the egg.
  4. Halve the red pepper and remove the seeds. Cut the pepper into small pieces and the chives finely. Add both to the avocado and egg.
  5. Add the mayonnaise and curry and mix everything together. Season further, if necessary.
