Bagel with avocado egg salad
Ingredients
- 4 bagels
- 4 eggs
- 2 ripe avocados
- 1 red pepper
- 20 sprigs of chives (tub of 20 g)
- 4 tbsp. Organic No Sugar Mayonnaise or Belgian Recipe Mayonnaise
- 0.5 tsp curry

- Bake the bagels according to the package directions.
- Boil the eggs hard for 8 min. Scald and peel them. Cut into small cubes and place in a bowl.
- Halve the avocados lengthwise and remove the core. Scoop the flesh out of the skin with a spoon. Cut into small cubes and add to the egg.
- Halve the red pepper and remove the seeds. Cut the pepper into small pieces and the chives finely. Add both to the avocado and egg.
- Add the mayonnaise and curry and mix everything together. Season further, if necessary.
