Pork Tenderloin with Black Truffle Mayonnaise

Ingredients

  • 2 pork tenderloins
  • 100 grams of breakfast bacon long strips
  • Jean Bâton Black Truffle Mayonnaise
  • butter for frying

  1. Take the pork tenderloin out of the refrigerator in time, pat it dry and let it come to temperature. Meanwhile, preheat the oven to 180 degrees.
  2. Coat the pork tenderloin all around with a layer of truffle mayonnaise and wrap the bacon around this. Repeat with the second pork tenderloin.
  3. Put a large skillet on the stove and let a knob of butter become golden brown in it and place the pork tenderloins in the pan. Fry for about 2 minutes on each side, until the bacon is nicely browned.
  4. Remove the pork tenderloin from the pan and place it in a baking dish. Bake the pork tenderloin in the oven for about another 15 to 20 minutes until tender.
