Sweet Potato Pomme Duchesse with Black Truffle Mayonnaise

Ingredients

  • 750 grams of sweet potato
  • 2 egg yolks
  • 1 tbsp Jean Bâton Black Truffle Mayonnaise
  • Salt pepper

  1. Peel the potatoes, cut the sweet potatoes into equal pieces and wash them well.
  2. Heat a pan with water and bring to a boil. Add the sweet potato and cook for 15 to 20 minutes until tender. Meanwhile, heat the oven to 180 degrees.
  3. Drain and mash the potatoes.
  4. Mix 1 tbsp mayonnaise and 2 egg yolks into the sweet potato and season the mixture additionally with salt and pepper, if necessary.
  5. Scoop the fine puree into a piping bag, with large serrated nozzle. Pipe tufts onto a baking sheet lined with baking paper.
  6. Bake the Pomme Duchesse for about 30 minutes until nice and crispy. Always check in between
